Chick-fil-a salads

Not sure if this qualifies as a copy-cat recipe if it was from the CFA website. . . .but these are three salads / sides from Chick-fil-a that they have retired from their regular menus to make way for other items - typically, healthier items.  They posted these (plus other dishes that use their ingredients) on their website for fans to make at home.

Cole slaw
Makes 6 - 8 servings

4 tsp distilled white vinegar
1/4 cup sugar
1/4 tsp dry mustard
1/4 tsp salt
1 cup mayo
20 oz finely shredded cabbage, chopped
1/4 cup diced carrots

Mix vinegar, sugar, mustard & salt together; add mayo.  Toss with cabbage and carrots.  Refrigerate for two hours.  Serves 6 - 8.

Carrot and Raisin Salad
Makes 6 - 8 servings
2 1/2 cups shredded carrots
4 oz crushed pineapple in juice
3/8 cup raisins
1/4 cup mayonnaise
1/4 cup sugar
1/2 tablespoon lemon juice

Mix all ingredients together and serve.

Chick-fil-A-Chicken-Salad
Makes 3 cups
4 Chick-fil-A Breasts (original or grilled) cooked & cut into 1" cubes
(As they tend to be smaller to fit nicely on the bun, probably 2 regular ones)
2.5 oz / 1.5 stalks celery, trimmed and cut into 1" pieces
1/3 cup sweet pickle relish
1/2 cup mayo
2 cooled and peeled hard-boiled eggs

Mix all except eggs in food processor for 5 seconds.  Add eggs and process a few more seconds until desired consistency, about 10 seconds or less.  Total processing time should be less than 15 seconds.
